Because of my husband's passion for fishing, we haven't bought fish or prawns in years. Therefore I know exactly where my seafood is coming from, we catch, filet and freeze within the day. This allows me to have a good amount of fish and prawns, enough to give some to our friends and to enjoy all year long.
Yesterday, I pulled a bag of spotted prawns out of the freezer and decided on a 2 peppercorn recipe.
Extremely easy to make, very fast and delicious!
Ingredients :
- prawns, peeled and de-veined
- 2 tablespoon of peppercorn ( one of pink, one of white)
- 1/2 teaspoon salt
- lime or lemon juice of 2 lemons, and zest
- 3 tablespoon olive oil
Roughly grind the peppercorn in a mortar, and mix with the salt
Add the lemon juice and zest, along with the olive oil
Add the shrimps and mix well. Make sure the shrimps are all covered by the peppercorn/ oil/lemon mixture.
Cook the prawns in a hot pan ( I use cast iron), until they are cooked thoroughly. ( about 2 minutes)
When cooked, set aside.
You will have prepared some rice ahead of time, here is the recipe of the one I made, it was tasty, full of flavour.
Ingredients :
- 2 tablespoons of olive oil
- 3 large shallots
- 2/3 of a cup of pine nuts
- 2 carrots, diced
- 2 cups of basmati rice
- 2 cups of chicken broth and 2 cups of water
In a wok or deep pan, cook the shallots along with the pine nuts in olive oil
When they are cooked, take them off the pan and reserve on the side
In the same pan, roast the carrots.
Add a little bit of chicken broth to sautee the carrots and release all the flavours of the shallots.
When the carrots are taking a nice colour, add the rice and stir to cover it with oil. Keep on the hot pan until the rice gets translucid.
Add the liquid ( chicken broth and water) stir, reduce heat to medium ( to keep a simmer, but not boiling) and cover for about 20 minutes.
When the rice is cooked, add the shallots and pine nuts, and keep on medium heat to dry the rice a little bit, stirring regularly.
Serve the prawns with a side of rice and a slice of smoked salmon. Make a lemon mayonnaise by adding 1 tablespoon of lemon in half a cup of mayonnaise ( easy enough !!).
